The Chef, Carmine Castaldo, a native of New
Jersey - born and raised in Madison, has always had a love for
fine food. As a young boy he was always helping and
experimenting in his mother's kitchen. He started working
in the kitchens of the former Braeburn Country Club (now Brooklake
Country Club) at the mere age of 9, working at the heels of
famed Chef Frank Cappolia. After years of working all
aspects of the kitchen, he moved on to Manhattan. As Head
Chef of World Yacht Enterprises he maintained private
yacht dining for royalty and world entertainers alike.
Carmine's passion led him to the Culinary Institute of
America and after graduating in 1987, he was hand-picked to
supercede a Master Chef and replace his position in the Escoffier
Room Restaurant. He stayed in that position until he
opened Deli Creations in Greenbrook and its' sister
company downstairs, Castaldo and Company with his wife, Jill. Both full service catering operations won praises
from local press and television. After selling their
businesses, Carmine and Jill happened upon this abandoned
property in Bethlehem Township. They walked in and
realized this was the next step. RosaLuca's was in full
swing in the Spring of 1999 and is still going strong thanks to
all of their loyal supporters and delighted new-comers!
